Cover bottom of large pyrex glass dish with soy sauce and olive oil.
Season with ground pepper and garlic powder.
Marinate 15 minutes to whatever ... experiment!
Turn a few times.
Reserve leftover marinade for basting.
Heat BGE to about 300
Place salmon skin side down on fish grid.
Smoke with Alder chips, add handful of chips 2 - 3 times ... experiment!
Cook for 1 1/2 hours, shorter for more moist meat.
Serve with crackers and cream cheese.
Try a side of maple syrup for a dipping treat ... some love it, some hate it???
