Beef Jerky

From Chuck “The Eggman” Watson

3/4 cup Soy sauce

1/4 cup Teriyaki sauce

1/4 cup Molasses

3/4 cup Brown Sugar

1/4 cup Honey

1 tbsp. Worchester sauce

3 Cloves Garlic

1 tsp. Onion Powder

1 tsp. Hot sauce

1 tsp. Chipotle Rub

Cut meat into 3/16 – 1/4 inch slices, with the grain. Round roast or brisket are good meats. Marinate at least 24 hours., mixing occasionally. Lay meat on screen or screens and your set.

Smoke over low heat (under 200 if possible), indirect, until desired dryness. Flip occasionally to dry out all sides. While still moist sprinkle with extra rub. Jerky is done when still a burgundy color, avoid it getting black.

Air dry for an hour before bagging.
